- Mycelium on grain: the root-like network grown on a bed of oats or rice, then dried and milled together with the grain. The finished powder can be majority starch.
Because the grain can't practically be separated from the mycelium, "myceliated biomass" products are selling you a meaningful proportion of cereal. A quality label says "fruiting body" explicitly. If it doesn't say, assume mycelium.
2. Beta-glucans, not "polysaccharides"
